Bioneers serving locally grown food to promote sustainability

When Kryssa Bowman agreed to cater this weekend's Northern Rockies Bioneers Conference, she had a lofty goal: Cook all the meals with ingredients grown or made within 100 miles of Bozeman.

“I love challenges, so I was like, 'Let's make it work, even if I have to do just salad and meat,'" said Bowman, owner of Thyme Savors, a personal chef service. “The local farmers and ranchers, they deserve to have our business."Other than the salt and pepper, she has managed to accomplish her goal, creating recipes for four different meals that will feed 325 people each. In addition to being home grown, all of the food will be pesticide free and organic.Accomplishing that feat wasn't easy. Bowman had to design the menus based on ingredients she knew she could find in the area.She picked plums and apples from local gardens and a neighbor's yard.


YouTube wine guru: A subtle hint of 'Big League Chew'

He's been called the first wine guru of the YouTube era. Yet Gary Vaynerchuk's bigger distinction may be this: He's a wine geek you'd actually enjoy having over for dinner.

Mr. Vaynerchuk, 32, hosts a daily video blog called Wine Library TV (which he has just rechristened the Thunder Show). To call it educational programming might be a stretch at times. More than one commentator has likened it to Wayne's World - with wine instead of guitars. Mr. Vaynerchuk's mission: to make chardonnay drinking safe for what he calls the "college-kid crew," many of whom presumably are too intimidated to stray far from Coors Light and Jägermeister shooters.

A natural in front of the webcam, Mr. Vaynerchuk discusses a new topic each day from Springfield, N.J., where he co-owns a large wine store with his father.

Older buildings near a newer house are a sign of the times in Minturn. More change is coming to the small town near Vail. Florida resort developer Bobby Ginn plans a billion-dollar project on 4,300 acres, which the town council voted to incorporate within Minturn's boundaries.

The most popular item on the menu is the chicken burrito ($4.79), Stephens said. Also popular are the nachos ($6.79), which come with any type of meat, and the chicken or steak quesadillas ($4.79).

And, of course, the margaritas can't be ignored.

"I feel like we make the best margaritas around," Stephens said. Customers can choose from standard, strawberry and raspberry flavors.

Salsarita's sunrise is a twist on the tequila sunrise and is also a popular drink, Stephens said.

There are plans in the works to begin offering live music on weekends in the summertime, he said.

Salsarita's Fresh Cantina -- 1125 Woodruff Road, suite 1905 -- is open for lunch and dinner Mondays-Saturdays from 11 a.m.-9 p.m., and Sundays from 11 a.m. to 7 p.m. The restaurant seats 80-85.
